Gellan gum has superior gel properties and has gradually replaced the use of agar and carrageenan. Can be widely used in pudding, jelly, sugar, beverages, dairy products, jam products, bread fillings, surface smoothing agents, candies, sugar coatings, seasonings and other foods to play the role of gelling agent, suspending agent, thickening agent and stabilizer.
